Carrie’s Summer Salad

Dressing

  • ⅓ cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 2 teaspoons honey
  • 1 teaspoon fresh poppy seeds
  • fresh herbs (basil, cilantro and mint)

Pulse in food processor until blended. Chill.

Salad

  • big bowl of fresh mixed greens
  • fresh mint
  • fresh basil
  • fresh cilantro
  • craisins
  • toasted or sugared almonds – slivered or sliced
  • shoestring carrots
  • diced cucumbers
  • sliced radishes
  • sliced strawberries
  • bleu cheese crumbles
